Recommended storage times for dried foods range from 4 months to 1
year.
Because food quality is affected by heat, the storage temperature
determines the length of time the food can be stored ; i.e. the higher the
temperature, the shorter the storage time.
Most dried fruits can be stored for 1 year at 160 C (60ºF), 6 months at 26oC ( 80ºF). Vegetables have about half the shelf-life of fruits.
Foods that are packaged seemingly “bone dry” can spoil if moisture is reabsorbed during storage. Check dried foods frequently during storage
to see if they are still dry. Glass containers are excellent for storage because any moisture that collects on the inside can be seen easily.
Foods affected by moisture, but not spoiled, should be used immediately or redried and repackaged.

I was wondering about the shelf life of dehydrated vegetables that have been dehydrated at home. I am doing the great alps walking track this summer and i would like to include dehydrated veges in my meals but i dont know if they would survive a month in a food drop that could have fairy uncontrolled temperatures. I am new to food dehydration.

I used the recipes from this book when I walked the Overland in April with pretty amazing company and was able to adapt my own recipes from the information in this book to suite my dietary requirements.  I ate very well.
My daughter has now used the book to help her with her food preparation for a 20 day hike to Mt Kosciosko.  She has found it a great resource.
Thank you - your time and effort has been so worthwhile.

Thanks for contacting us.  I had a look around the Biosecurity NZ site: http://www.biosecurity.govt.nz/ - Like you I cannot find anything specific.
My GUESS is that it will be fine and think it would be the same as Tasmania (which has very strict rules)  You may need to send them an email or even call them.
